The time has come again: Our hilarious picnic is coming – on June 2, we want to sip a few drinks with you on the green belt under the Colonius, eat something, listen to live music and enjoy the best weather. We pack music, cakes, cool drinks, spirits, pennant chains and yellow balloons. You bring a large blanket, friends, family and snacks. And if you don’t know what to prepare, we have a few recipe ideas for you here.

1. Summer rolls

You need this: Rice paper, soy sauce, peanut sauce and everything you like in fruits and vegetables, for example: lettuce, avocado, mango, bell pepper, carrots, cucumber, coriander, mint

How to do it: Cut all the vegetables into small pieces, pour them into a bowl of lukewarm water, soak the rice paper for five seconds and spread it carefully on a plate. Now the sauces and ingredients can be placed on the rice paper as desired. Fold in the sides so that the filling is slightly enclosed and then pour the lower half of the rice paper over the filling and roll.

2. Obatzda

You need this: 200 g soft cheese, 60 g cream cheese, 1 onion, 0.5 tsp paprika powder and salt & pepper

How to do it: The soft cheese must be removed from the refrigerator at least one hour beforehand so that it is no longer hard. Then simply crush it with a fork and put it in a bowl. Peel the onion, chop as finely as possible and add it together with the cream cheese and spices and mix well – the picnic snack is ready!

3. Sandwiches

You need this: Flat or toast bread, delicious spreads, vegetables (salad, arugula, cucumber, carrots, etc.), toothpicks and cheese or sausage as desired

How to do it: Cut the toast or flatbread into chunks and spread with the spreads, cut the vegetables into small pieces and wash the salad. Distribute the vegetables on the respective breads, close them, prick in the toothpicks, done.

4. Energyballs

You need this: for about ten balls – 150 g of dried fruit (for example apricots, figs, dates), 70 g of nuts, 2 teaspoons of peanut butter, 2 teaspoons of cocoa powder and coconut flakes

How to do it: Cut the dried fruit and nuts into small pieces, mix with the cocoa powder and peanut butter and knead together. The balls are formed from the mass – then coated with coconut flakes or, for example, with chia seeds or matcha powder.

5. Fig rolls with cream cheese

You need this: Cream cheese (optionally goat cream cheese), figs, blueberries and your favorite bread

How to do it: Brush the bread with the cream cheese, place the freshly cut figs on top and decorate with a blueberry. If you are very ambitious, make the cream cheese yourself with parsley and the like.

6. Banana bread

You need this: 2 ripe bananas, 250 g flour, 50 g sugar, 2 tsp baking powder, 2 tsp vanilla sugar, 75 ml milk, 2 tbsp oil

How to do it: Preheat oven. Crush the bananas with a fork and put them together with the sugar, vanilla sugar, oil, baking powder and flour in a bowl. Add milk and stir with a spoon. Place the dough in a form lined with baking paper and bake in the oven for approx. 45 min at 180 ° top and bottom heat. Tip: Of course it tastes even better if you chop some chocolate and add it to the dough.

7. Vegetable wraps

You need this: Cream cheese or herb curd, wraps and vegetables as desired, for example: lettuce, cucumber, tomatoes, chives, peppers

How to do it: The wraps are heated briefly in a hot pan without fat. Cut the vegetables into small pieces. Then wraps are coated with cream cheese or herb curd and the vegetables are spread over them. Now the wraps on the outside are folded in and rolled up from the open side. If you like, you can cut the wraps into small bites.

8. Vegetable skewers

You need this: Olives, bell peppers, mozzarella balls, radishes, cocktail tomatoes, basil, long skewers

How to do it: Chop the peppers and radishes. Pick the vegetables alternately on the skewer. Tip: If you miss carbohydrates, just pick up a few tortellini.

9. Mini pizzas made from puff pastry

You need this: A pack of puff pastry, 250 g sour cream, dried oregano, 250 g cocktail tomatoes, two large tomatoes, olives, salt, pepper, basil leaves

How to do it: Preheat the oven to 200 degrees. Roll out the puff pastry on the baking sheet lined with baking paper and brush with sour cream. Slice the large tomatoes and cut the cocktail tomatoes in half. Then spread all the tomatoes and olives evenly over the dough. Season with oregano, salt and pepper. Bake in the oven for about 15 to 20 minutes at 175 degrees top and bottom heat. Garnish with basil leaves.

10. Mini quiches

You need this: A pack of puff pastry, 100 g cherry tomatoes, 100 g peas, two shallots, three eggs, basil leaves, 100 ml cream, 150 g cream, salt and pepper

How to do it: Preheat the oven to 180 ° C, roll out the puff pastry and cut out round pieces of dough with a glass or small bowl. Place dough pieces in a muffin tin or mini tart tins and press the edge well. Halve tomatoes, cut shallots and mix both with the peas and the basil. Spread the vegetable mixture over the dough pieces. Mix the eggs with the cheese and cream and season with salt and pepper. Pour the mixture over the vegetables. The quiches are baked in the oven for about 30 minutes.

11. Chocolate muffins

You need this: 250 g flour, 150 g sugar, 2 tbsp cocoa powder, 2 tsp baking powder, 1/2 tsp soda, 150 g chocolate drops, 75 g chocolate droplets, 250 ml milk, 90 ml oil, 1 egg

How to do it: Preheat the oven to 150 degrees. Set aside half of the small chocolate drops in advance. All dry ingredients are mixed together, then milk, oil and the egg are added and everything is stirred well. Now pour the mass into twelve muffin cases and spread the remaining chocolate droplets on top. The muffins are baked for around 20 minutes at 150 degrees.
