  • 250g curd cheese

  • ½ tsp tartar baking powder

For the filling:

  • 600ml sauerkraut (from the can / the glass)
  • 1 onion
  • 250g cream cheese
  • 3 eggs (M)
  • 1 tbsp mustard
  • 1 tsp (whole) caraway seeds
  • Himalayan salt
  • pepper

Here’s how you do it:

Preheat your oven to 180 ° C.

Then first mix all the ingredients for the dough using a hand mixer. The dough must now be left to stand for the oat bran to swell.

Then cut the onion into small pieces and fry them in a pan. Once it’s glassy, ​​you can add the sauerkraut. Mix everything well.

Low carb spaetzle with oat bran

  • 50g oat bran
  • 50g protein powder
  • 35g butter
  • 3 eggs (M)
  • 1 tsp Himalayan salt
  • nutmeg

Here’s how you do it:

First heat 25g of the butter until it becomes liquid and then stir the lukewarm, liquid butter with the eggs. Mix the oat bran and the protein powder in a bowl and add the mixture to the butter-egg mixture in tablespoons.

Then season the dough with the salt and grate a little nutmeg over it. You can let the dough rest for 15 minutes so that the oat bran can swell a little.

Bring a pot of water to a boil and drop the dough into the water using a spaetzle press (scraper is also possible, of course). After about 1-2 minutes, the low carb spaetzle should rise. You can then simply skim them off and store them in a sieve. Repeat this process until the dough is exhausted.
