"If you wanted to eat something somewhere late at the time, there was only kebab or sausage", says Oliver Miller. Nevertheless, it still takes twelve years before he opens an original American diner in the German capital: the restaurant Nalu diner in the Berlin district of Prenzlauer Berg.

Denver omelette with buttermilk pancakes and breakfast patties

  • ½ tsp dried parsley
  • ½ tsp cayenne pepper
  • ½ tsp paprika powder
  • ½ tsp black pepper
  • ½ teaspoon dried thyme
  • ½ tsp ground coriander
  • ½ tsp dried sage
  • ½ tsp chilli flakes
  • oil

For the buttermilk pancakes

  • 1 liter of buttermilk
  • 2 eggs
  • 30 g butter
  • 300 g of flour
  • 20 g baking powder
  • 20 g of sugar
  • 10 g baking soda
  • A pinch of salt
  • oil
  • Butter and maple syrup as a topping

For the Denver omelet

  • 12 eggs
  • 120 g red, green and yellow peppers
  • 120 g cooked ham
  • 180 g grated cheddar cheese
  • Salt pepper
  • oil

preparation

Mix the spices with the minced pork for the breakfast patties and shape them into small balls. Heat the oil in a pan, flatten the balls and brown the patties on both sides. Then keep warm.

For the pancakes, melt the butter in a pan, then stir in a bowl with the buttermilk and eggs. Mix flour, baking powder, sugar and baking soda in another bowl, then mix both mixtures. The dough should be a little lumpy. Heat the oil in a pan and fry part of the dough over medium-high heat until small bubbles form on the surface. Then turn the pancake and fry until the underside is golden brown. Do this until the batter is used. Keep the pancakes warm.

Wash the peppers for the Denver omelet and cut them into fine cubes, as well as the cooked ham. Heat oil or butter in a pan, making sure that the bottom of the pan is completely covered with oil or melted butter. Then add a quarter of the pepper and ham cubes to the pan and stir-fry for 30-60 seconds, then reduce the heat. In the meantime, beat the eggs in a bowl, whisk, salt and pepper. Put part of the eggs in the pan and fry with ham and bell pepper for about a minute, then add a little cheddar cheese and fry for another 30 seconds. Finally, fold in the omelette.

Arrange the Denver omelet, pancake and breakfast patty together on a plate. Put a little butter and maple syrup on the pancake.
