Kale as a vegan source of protein
In the previous broccoli casserole with cheese recipe, I called broccoli a protein bomb. If broccoli is already a protein bomb, kale is a vegan protein atom bomb. Because kale contains 4.3 g of protein.
Broccoli is considered high in protein and contains around 2.8 g of protein. Spinach is also considered a plant with a high protein content and contains about 2.9 g of protein. Thus kale is clearly the winner as a vegan protein source.
