Quick minced meat and soup with leek – a matter of taste

There is absolute love for soups at the moment, so it is probably said today: "Soup, shut up the 2nd!"

Because today there is delicious minced meat and cheese soup with leek. A classic.

By the way, I don’t like soups just because they are easy to cook. No, they are also wonderful for taking pictures. Because I can let off steam and try things out. Then I just warm them up briefly and my family finally gets warm food again.

This is probably the downside of food bloggers. The food must first be photographed before it can touch a family member. If I’m honest, it all starts with shopping. I stand for ages in front of the fruit and vegetable stand, just to choose the most beautiful leeks, for example. I prefer not to talk about all the dishes, towels and vessels that I drag here. Hust.

But let’s get to the recipe.

3 sticks of leek in pieces (approx. 300g)

500g mixed minced meat

2 tsp. Vegetable broth homemade or as a cube

3 pinches of pepper

2 pinches of nutmeg

Preparation of minced meat and cheese soup

Put the cloves of garlic in the mixing bowl and chop them for 4 seconds / level 5 and push them down with the spatula.

Place the leek in pieces in the mixing bowl and chop for 10 seconds / level 4.5 using the spatula. Alternatively, you can cut the leek into rings.

Now steam the leek for 5 minutes / 120 degrees (TM31 Varoma) / counterclockwise rotation / level 2.

Fry the minced meat in the pan with a little oil. I think it tastes better. You can also use the spatula to stir in the minced meat after the leek has been steamed for 15 seconds / counterclockwise rotation / level 2. Then the consistency becomes very fine.

Add minced meat to the leek and add water, broth, salt, pepper and nutmeg and cook for 13 minutes / 100 degrees / counterclockwise rotation / level 2.

Add the cream and processed cheese and continue cooking for a further 6 min / 100 degrees / counterclockwise rotation / level 2.

Arrange on plates with a little fresh pepper

Preparation without Thermomix

Chop the garlic and cut the leek into rings.

Heat the oil in a large saucepan and add the garlic. Then add the minced meat and fry.

Add the leeks and sauté for a few minutes. Deglaze with water and add the broth and spices.

Approximately Simmer for 13 minutes. Add the cream and processed cheese and continue cooking for a few minutes.

Spread the minced meat and cheese soup and serve with fresh pepper.
